Patient Story: Aiden Fallon, 42 years old

“In my early teens, I played all sorts of sports and was incredibly fit. Unfortunately, due to knee injuries, I had to stop sports, which happened to coincide with a promotion in my career so there was a shift in the way I spent my time.

“For the last 20 years, I have worked 12 or more hours each day. My main time to eat food is in the car, on the run, or late in the evenings. I don’t really have a sweet tooth so I can avoid chocolate and sweets fairly easily but my big downfall is starchy foods like bread and potatoes.

“My weight slowly began to creep up and, initially, I didn’t mind as the weight had plenty of places to hide since I am over 6 foot 2 inches with broad shoulders. But I soon began to become very conscious of my weight and, even though I exercised on most days of the week, I just could not drop the weight. I tried everything from joining my wife in doing Weight Watchers to other diets and I even tried enrolled on a vegetarian cookery course but nothing really worked.

“I found myself exhausted at the weekends and spent a lot of time on the couch with no energy. As tired as I was, I never slept very well and tended to be awake at night, thinking about work. I began to think seriously about seeing someone on a one-to-one basis as, at 18 Stone 10 Pounds, I honestly felt like a beached whale. The Michelin Man didn’t have a patch on me!”

“One day in January, when I was walking out of my dentist’s clinic, I saw a card for Elaine’s clinics and that was the beginning of turning things around.

Meeting Elaine was like a breath of fresh air. She has an amazing approach to a healthy food plan (I don’t use the word ‘diet’ as it is less positive than ‘plan’).

“When Elaine read my food diary, she agreed what I was eating was fresh and healthy food, but there was just way too much of it and I was eating it at the wrong time of the day. I would regularly eat breakfast at 6am and then nothing at all until 9pm that night, when I would overeat.  Elaine set out a regimented food plan for the first few weeks and she said that no exercise was needed at all.

“Almost immediately the weight started to fall off, and the best part was that it was staying off and it was relatively easy to do. Elaine was actually able to predict what my weight loss would be for the next visit and this was always correct.

“I remember saying to Elaine that getting to 17 stone would be an achievement. I am delighted to say that we are at the stage that our target is 15 stone 7 lbs (I am currently hovering around the 16 stone mark). Note that I say ‘our’ target as I always feel that both my wife and Elaine are with me every step of the way.

“At my heaviest, I was wearing 42-inch waist trousers and now I have had to buy a whole new wardrobe as I can fit into 35-inch trousers. I also went from an 18 and a half inch neck shirt to a 17-inch shirt, which is incredible.

“As hard as I work, I can honestly say that I now produce more work within the same time frame. I find that my mind is faster and sharper and my concentration is higher. With the weight loss, I also find that I now sleep like a baby. I was also able to take up cycling again and I’ve joined a cycling club which I really enjoy – before, I would be tired if I drove 100Kms but now I can cycle that same distance and I feel fine!

“With my increased fi tness level Elaine changed my food plan to cater for my training. What I found amazing was that, if I did stick to the plan, I performed much better. I now wear a heart monitor computer and I can see my results improve when I prepare for training correctly with the food recommended by Elaine.

“I now see Elaine every four to five weeks to keep focused. I can honestly say that Elaine is the second best thing (after my amazing wife!) to have every happened to me. It’s the best investment I have ever made. It has even saved on my shopping bill as I now eat less. I am now back to the weight I was 20 years ago and soon I will be back to the weight I was 25 years ago – I would never have dreamed that it was possible but it is.”

About Elaine

Elaine graduated from Trinity College with a B.Sc., (Hons) in Human Nutrition and Dietetics. She gained wide experience working as clinical nutritionist in several hospitals prior to establishing her first private dietetic clinic in 1992.

Private Practice Experience
Elaine has gained vast experience specialising in providing private individual dietetic consultations for her clients in her clinics for the past 17 years. In recent years, her main areas of interest are weight management, obesity, diabetes, heart disease and nutrition and gastro-enterology.

Elaine is an active member of the INDI and was chairperson of the Irish Nutrition and Dietetic weight management interest group from 2005 to 2007.

Elaine has provided dietetic consultancy to a wide range of industries including private hospitals, hotels and catering companies. She has designed, piloted, implemented and coordinated workplace wellbeing programmes for several prominent companies and large international corporations.
